A new pizza restaurant inspired by the flavors and atmosphere of New York City has arrived in Glasgow, offering foodies in the city a taste of the Big Apple. Sear’s, located on Chancellor Street, has opened its doors this week with the aim of transporting Glaswegians to a cool, 1980s pizza shop reminiscent of the iconic slices and 18-inch pies found on every street corner in NYC.
The Best Pizza in Town
Sear’s offers guests a selection of nine different pizza options made with high-quality ingredients such as low-moisture mozzarella, San Marzano tomatoes, and a mix of Italian and organic, sustainable Wildfarmed Regenerative dough that is fermented and baked to perfection. Each slice is priced at £5 or under, making it an affordable and delicious option for those craving a taste of authentic New York-style pizza.
A Taste of New York in Glasgow
The concept for Sear’s was created by Daryl Leach, the founder of Baked Pizza Al Taglio, along with Paul Beveridge, the founder of Ramen Dayo!, and Tom Lauckner, the co-founder of Piece Glasgow. Paul Beveridge, who was responsible for the creative design of the restaurant’s interior, aimed to recreate the ambiance of an 80s/90s New York deli with exposed brick walls, wood paneling, a menu board, a self-serve soda fountain, neon signs, counter service, and a case filled with mouthwatering pizza pies.
Paul shared his inspiration for the design, stating, “Shop interiors have always been an obsession of mine. I was lucky to visit New York as a kid in the 80s and 90s, and I remember being blown away by the hand-painted signage and aesthetic of the bodegas and pizza shops. This was when NYC art and club culture was at its peak, so I’ve tried to incorporate that imagery into our shop interior.”
The Journey to Perfect Pizza
Daryl Leach’s passion for pizza started at a young age, leading him to become a skilled pizza chef in local Glasgow restaurants. He further honed his craft by spending time in Naples and Rome, where he mastered the art of pizza-making, producing over 1000 pizzas a day. His love for the New York slice eventually led him to move to the city in 2016, where he worked as a pizzaiolo at Ray’s Pizza and Bagels on St. Mark’s Place in the East Village.
At Ray’s, Daryl learned the secrets of making the classic New York pie and was inspired by the diverse crowd that gathered at the pizzeria. He recalled, “Ray’s was open almost 24/7, and its affordability in an otherwise fairly expensive neighborhood allowed all walks of life to mingle together while sharing pizza. The experience inspired me to bring the same vibe to Glasgow.”
Daryl expressed his excitement about bringing his love for pizza to the people of Glasgow, stating, “We know good pizza, we bake great pizza, and we can’t wait to serve it to the amazing people of Glasgow!” With a passion for quality ingredients, authentic flavors, and a dedication to creating a memorable dining experience, Sear’s promises to be a must-visit destination for pizza lovers in the city.
